Cooking Tips

For the perfect steak every time...

    1. Bring to room temp – Take the steak out of the fridge about 30 minutes prior to cooking
    2. Drizzle the steak with about a tablespoon of olive oil and Season generously with salt and pepper 
    3. Heat your pan or BBQ – Heat your pan or BBQ grill until it is very hot
    4. For Well Done steak, cook for 5-6 minutes each side
    5. For Medium Well Done steak, cook for 3 and a half minutes each side
    6. For Medium steak, cook for 3 minutes each side
    7. For Medium Rare steak, cook for 2 and a half minutes each side
    8. For Rare steak, cook for  minutes each side
    9. Rest – Allow steak to rest for 2-5 minutes. Rule of thumb is to rest for approximately how long you cooked.

       

Extra tips

      • Use a heavy based pan to ensure even heat distribution
      • Resting the meat after cooking is super important. Resting the meat to relax and keeps the juices in your steak not on your plate. Rest on a warm plate covered with foil for best results

Filo pastries

  1. Preheat oven to 180°C and cook for 35 – 45 minutes as a guide
  2. Pastry should be golden and flaky and filling should be hot when pierced with a skewer.

Extra Tip: Brush with milk, egg wash or butter prior to cooking for a golden brown perfect result.

Beef Wellingtons

  1. Preheat oven to 180°C 

  2. Cook between 35 – 50 minutes depending on your preference of eye fillet. 

Extra tip: The lower the cook time, the rarer the eye fillet will be when served. 

Chicken Kiev

  1. Air Fryer Method: Cook at 180°C for 35 – 40 minutes 

  2.  Oven Bake Method: Shallow fry in pan to brown outside 

  3. Place in preheated oven at 180°C for 30 – 40 minutes 

Chicken Pinwheels

  1. Preheat oven to 180°C fan forced 

  2. Cook between 30 – 40 minutes. Oven times may vary depending on oven. Look for golden pastry and chicken cooked through (white) as a visual indicator.

Stuffed Chicken Breast

  1. Preheat oven to 180°C 

  2. Cook between 40 – 50 minutes until chicken is cooked through 

Extra tip: Cover with foil for the first 35 – 40 minutes to stop marinade from burning. Take off foil for the last 10 – 15 minutes to brown the top. 

Enchiladas

  1. Preheat oven to 180°C fan forced 

  2. Cook between 25 – 35 minutes until outside is golden and insides are hot when pierced with a skewer 

Sausage rolls

  1. Preheat oven to 180°C fan forced 

  2. Cook between 30 – 40 minutes. Oven times may vary depending on oven. Look for golden pastry and filling to be hot when pierced with a skewer.

Arancinis

  1. Preheat oven to 180°C fan forced 

  2. Bake between 30 – 40 minutes. Cooking times may vary depending on oven. 

Note: This item is precooked, so all you need to do is make sure it’s warm before serving

Christmas Cooking Times

Turkey (Whole)

  1. Place turkey in a tray with 1 cup water & 4 tablespoons olive oil and cover with foil.
  2. Place in a preheated oven at 180°C and cook at 45 mins per kilo (unseasoned) or 55 mins per kilo (seasoned.
  3. Baste in own juice every 20 mins and remove foil 30 mins before completion to allow Turkey to brown. 
  4. Cover with foil and leave the roast to rest for 10 mins before carving.

Turkey Breast

  1. Oven bake for 50 mins per kilo at 200°C for the first 30 mins then 175°C thereafter.
  2. When cooked, cover with foil and allow to rest for 10 mins before cutting the netting and carefully peeling off the net.

Pork (rolled)

  1. Preparing your pork – Pat the skin dry with a paper towel, rub oil and salt into scored skin for crackling.

  2. Cook pork 45 minutes per kilo.

  3. Place in hot oven, 220°C for 20 – 30 minutes then reduce temperature to 180°C for the remainder of cooking time.

  4. Rest for 5-10 minutes before carving.

  5. Extra Crackling can be rubbed with oil and salt and placed in hot oven (220°C) or under grill until bubbling, golden and crisp.

Extra tip: Keep a close eye on it as it will burn quickly
