Cooking Tips
For the perfect steak every time...
- Bring to room temp – Take the steak out of the fridge about 30 minutes prior to cooking
- Drizzle the steak with about a tablespoon of olive oil and Season generously with salt and pepper
- Heat your pan or BBQ – Heat your pan or BBQ grill until it is very hot
- For Well Done steak, cook for 5-6 minutes each side
- For Medium Well Done steak, cook for 3 and a half minutes each side
- For Medium steak, cook for 3 minutes each side
- For Medium Rare steak, cook for 2 and a half minutes each side
- For Rare steak, cook for minutes each side
- Rest – Allow steak to rest for 2-5 minutes. Rule of thumb is to rest for approximately how long you cooked.
Extra tips
- Use a heavy based pan to ensure even heat distribution
- Resting the meat after cooking is super important. Resting the meat to relax and keeps the juices in your steak not on your plate. Rest on a warm plate covered with foil for best results

Filo pastries
- Preheat oven to 180°C and cook for 35 – 45 minutes as a guide
- Pastry should be golden and flaky and filling should be hot when pierced with a skewer.
Extra Tip: Brush with milk, egg wash or butter prior to cooking for a golden brown perfect result.
Beef Wellingtons
Preheat oven to 180°C
Cook between 35 – 50 minutes depending on your preference of eye fillet.
Extra tip: The lower the cook time, the rarer the eye fillet will be when served.
Chicken Kiev
Air Fryer Method: Cook at 180°C for 35 – 40 minutes
Oven Bake Method: Shallow fry in pan to brown outside
Place in preheated oven at 180°C for 30 – 40 minutes
Chicken Pinwheels
Preheat oven to 180°C fan forced
Cook between 30 – 40 minutes. Oven times may vary depending on oven. Look for golden pastry and chicken cooked through (white) as a visual indicator.
Stuffed Chicken Breast
Preheat oven to 180°C
Cook between 40 – 50 minutes until chicken is cooked through
Enchiladas
Preheat oven to 180°C fan forced
Cook between 25 – 35 minutes until outside is golden and insides are hot when pierced with a skewer
Sausage rolls
Preheat oven to 180°C fan forced
Cook between 30 – 40 minutes. Oven times may vary depending on oven. Look for golden pastry and filling to be hot when pierced with a skewer.
Arancinis
Preheat oven to 180°C fan forced
Bake between 30 – 40 minutes. Cooking times may vary depending on oven.
Note: This item is precooked, so all you need to do is make sure it’s warm before serving
Christmas Cooking Times
Turkey (Whole)
- Place turkey in a tray with 1 cup water & 4 tablespoons olive oil and cover with foil.
- Place in a preheated oven at 180°C and cook at 45 mins per kilo (unseasoned) or 55 mins per kilo (seasoned.
- Baste in own juice every 20 mins and remove foil 30 mins before completion to allow Turkey to brown.
- Cover with foil and leave the roast to rest for 10 mins before carving.
Turkey Breast
- Oven bake for 50 mins per kilo at 200°C for the first 30 mins then 175°C thereafter.
- When cooked, cover with foil and allow to rest for 10 mins before cutting the netting and carefully peeling off the net.
Pork (rolled)
Preparing your pork – Pat the skin dry with a paper towel, rub oil and salt into scored skin for crackling.
Cook pork 45 minutes per kilo.
Place in hot oven, 220°C for 20 – 30 minutes then reduce temperature to 180°C for the remainder of cooking time.
Rest for 5-10 minutes before carving.
Extra Crackling can be rubbed with oil and salt and placed in hot oven (220°C) or under grill until bubbling, golden and crisp.
